Gluten Free Double Chocolate Mug Cake

This Gluten Free Double Chocolate Mug Cake is a dream come true. It is chocolaty, super moist, and so decadent. If you are a chocolate lover, you’ll definitely want to indulge yourself in this gluten free chocolate mug cake.  

Normally, I am not one who likes sweets/desserts, nor do I make them that often at our house, but I do have a sort of appreciation for them. This mug cake definitely wins in my top 10 gluten free desserts of the year, and I believe it is the perfect dessert to serve for valentine’s day.

WHAT SIZE MUG DO YOU NEED

Before you begin, make sure that any mug you are going to use is microwave safe.

The larger the mug the better. If you use too small of a mug, the mug cake might spill out the sides and create a mess for you in the microwave. I don’t know the size of the mugs that I use, but they are pretty big.

If you are not sure whether your mug is too small, or whether it is not big enough, you can still make this mug cake in a microwave safe cereal bowl.

GLUTEN FREE MUG CAKE INGREDIENTS

  •  Dark chocolate Chips. As the  chocolate chips melt into the mug cake, they make it extra moist, and give it this luxurious, silky, moist feel.
  • Chantal’s all-purpose gluten free flour blend you can click on the link to take you to the recipe if you haven’t made it yet.
  • Sugar you can adjust the amount of sugar to your liking. I normally make it with a 1/4 cup of sugar, but I also find that to be a bit too heavy, and I end up sharing the mug cake with someone. The conclusion is, if you do not like things to be too sweet, you can reduce the amount of sugar to two tablespoons. You can also use any type of sugar that you prefer.
  • Unsweetened cocoa powder. Please don’t use the baking type cocoa powder! sometimes baking cocoa powder can have traces of wheat in it. If you want your baked goods to taste good, you’ll need to use a high quality cocoa powder. My favorite to use is Hershey’s cocoa powder. I usually buy it in bulk because I am a chocoholic. You can use my affiliate link Hershey’s cocoa if you want to buy it in bulk like I do. That is if you are a chocoholic like I am, or if you just want to have some extra on hand.
  • Salt its job is to simply enhance the flavor of the mug cake.
  • Boiling water to activate the cocoa powder and allow it to mix in properly with the rest of the ingredients. Do not miss this step. Your gluten free mug cake would taste so much better if you activate the cocoa powder first, or in other words, use hot liquids to mix in the cake.
  • Warm milk You can use any type of milk that you prefer, lactose free milk, almond milk, coconut milk, or oat milk. We use warm milk for the same reason we use boiling water. 
  • Vegetable oil or melted coconut oil. For a lighter version, you can try substituting the oil with apple sauce, but I have personally never tried it this way, and I cannot say with confidence that this would work. Equipment

  • Measuring cups
  • Measuring Spoons
  • Large microwave safe mug
  • Small spoon for mixing
  • Small microwave safe plate

Ingredients
  

  • 2 tablespoons dark chocolate chips
  • ¼ cup Chantal’s all-purpose gluten free flour blend
  • ¼ cup sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • ¼ teaspoon vanilla extract
  • 2 tablespoons boiling water
  • 3 tablespoons warm milk
  • 2 tablespoons vegetable oil or melted coconut oil

Instructions
 

  • Add in all the dry ingredients into a large microwave safe mug, except for the dark chocolate chips. Mix to combine.
  • Add in the boiling water, warm milk, and vanilla, and mix well to remove any clumps.
  • Add in the oil, and mix, until well incorporated.
  • Place the chocolate chips into the center of the mixture, and give it a gentile stir. You can sprinkle a bit more on top if you would like.
  • Place the mug onto a microwave safe plate, and place it into the microwave. The plate is there to catch any spilling that might occur.
  • Microwave on high for 1 minute and 30 seconds to 1 minute and 45 seconds.
  • Serve warm or cold

Notes

Check your microwave wattage before you proceed with the microwaving process. Every microwave is different. Microwaves with higher wattages tend to cook the food a lot faster than those with lower wattages. Our microwave is 1100 W output which is the energy used to cook the food. At that energy level, I cook the mug cake for 1 minute and 30 seconds.
